Date bites with Ísey Skyr
These energy packed date bites are simple to make and perfect to keep in the freezer for a quick snack.
Ingredients:
- 20 fresh dates / 250 g
- 170 g Ísey Skyr Vanilla / 1 small cup
- 25 g peanut butter / almost 2 tbsp
Chocolate topping:
- 10 g coconut oil / 2 tsp
- 10 g cocoa powder / 2 tsp
- 10 g honey or other sweetener / 2 tsp
Method:
- Start by opening the dates and removing the pits. It’s very important to use fresh dates for this recipe, as you can’t fill dried ones in the same way.
- Mix the skyr and peanut butter together, then fill each date with the mixture.
- Place the filled dates in the freezer for a short while while you prepare the chocolate.
- Melt together the coconut oil, cocoa powder, and honey. Add a little chocolate on top of each date and decorate with shredded coconut.
