Date bites with Ísey Skyr

These energy packed date bites are simple to make and perfect to keep in the freezer for a quick snack.

Ingredients:

  • 20 fresh dates / 250 g
  • 170 g Ísey Skyr Vanilla / 1 small cup
  • 25 g peanut butter / almost 2 tbsp

Chocolate topping:

  • 10 g coconut oil / 2 tsp
  • 10 g cocoa powder / 2 tsp
  • 10 g honey or other sweetener / 2 tsp

Method:

  1. Start by opening the dates and removing the pits. It’s very important to use fresh dates for this recipe, as you can’t fill dried ones in the same way.
  2. Mix the skyr and peanut butter together, then fill each date with the mixture.
  3. Place the filled dates in the freezer for a short while while you prepare the chocolate.
  4. Melt together the coconut oil, cocoa powder, and honey. Add a little chocolate on top of each date and decorate with shredded coconut.
