Healthy Snickers Bites

- 30-35 fresh dates
- 170 g Ísey vanilla skyr
- 80 g peanut butter
- 80 g peanuts (whole and crushed)
- 250 g dark chocolate
- 1 tbsp coconut oil
- Start by removing the pits from the dates, set dates aside.
- Mix together skyr and peanut butter and use a piping bag to fill the dates with skyr mixture, add few whole peanuts to each and freeze for about 30 minutes.
- Melt the dark chocolate with the coconut oil and gently coat each date with chocolate.
- Place chocolate covered dates on a baking sheet, top with crushed peanuts and let set in the refrigerator or freezer.
- Keep dates stored in the freezer.
